A delicious speedy weeknight dinner. This recipe not only makes a nutritious meal with the added fibre from the chickpeas, but it also brings loads of flavour and texture with the addition of creamy feta and oregano.

Ingredients
beef mince 500 g
garlic granules 2 tsp
roasted red peppers 2 (chopped)
red onion 1 (sliced)
chickpeas 800 g (drained)
dried oregano 1 tbsp
feta 100 g (crumbled)
natural yoghurt to serve
Method
Make the meatballs
Finely chop half the roasted pepper and thinly slice the rest of it.
In a bowl combine the beef mince, garlic granules, half the dried oregano and the finely chopped roasted pepper. Shape into meatballs(4 per serving).
Cook the meatballs & chickpeas
Place the meatballs in the air fryer and cook for 15 minutes at 190°C.
While the meatballs are cooking, peel and slice the red onion. Heat a dash of oil in a frying pan over a medium heat. Add the red onion and cook for a few minutes. Stir in the sliced red pepper, chickpeas and the rest of the dried oregano
Stir to combine and cook for 5 minutes until the chickpeas are warmed through.
Plate up
Spread some yoghurt on the base of each plate, then top with the meatballs and chickpeas. Crumble over the feta** then tuck in and enjoy!
