The perfect lazy day brunch, that's also delicious for lunch or dinner - and it couldn’t be simpler. All you need is some good bacon, a tin of chickpeas, some spinach (or other favourite greens - kale or cavolo nero would also be great) and a perfectly fried egg.

Ingredients
bacon 200 g (chopped)
chickpeas 400 g (drained)
chilli flakes 1 tsp
spinach 100 g
egg 4
sourdough 4
Method
Prep the ingredients
Chop the bacon. Drain the chickpeas.
Cook the dish
Heat a dash of oil in a large frying over a medium heat. Add the bacon and fry for 4-5 minutes until nearly crispy.
Add the chickpeas and chilli flakes, stir to combine and fry for 3-4 minutes until the chickpeas are warmed through.
Add the spinach and let it wilt, season to taste with salt (remember the bacon will add some saltiness).
Cook the eggs & toast the bread
Heat a glug of oil in a large frying pan over a medium heat. Carefully crack the eggs into the pan and fry to your liking - 3 minutes for a runny yolk, 4-5 minutes for a medium yolk and 6 minutes for a hard yolk.
While the eggs are frying, toast the sourdough.
Plate Up
Plate up your dish - top the toasted sourdough with bacon and chickpeas and finish with a fried egg. Enjoy!
