Who doesn’t love a kebab! This is one of my favourite summer recipes ideal for Father's Day. Get marinating the meat, light that BBQ and make an epic kebab! Complete with all the trimmings.

Ingredients
chicken thighs 6 (chopped)
smoky bbq fajita seasoning spice mix 2 tbsp
red cabbage ½ (sliced)
vinegar 2 tbsp
tomatoes 2 (sliced)
flatbreads 4
mayonnaise 4 tbsp
mixed leaf salad 100 g
Method
Marinate the chicken
Chop the chicken thighs into big chunks.
Mix the chicken with the smoky bbq fajita seasoning spice mix and set to one side to marinate for at least 30 minutes.
Prep the red cabbage & tomatoes
Thinly slice your red cabbage as thin as possible, then add a generous splash of vinegar and a good pinch of salt, mix and set to one side.
Slice the tomatoes.
BBQ the chicken
Skewer up the chicken thighs, folding the skin in between each fold. Season with a pinch of salt.
Light the BBQ, prepare a hot (direct) and cooler (indirect) section.
Cook your chicken for 10-15 minutes, turning until cooked through and charred. Leave to rest then slice.
Plate Up
Heat the flatbreads on the BBQ.
Layer each flatbread with the mayonnaise, mixed leaf salad, sliced tomato, pickled cabbage, and chicken.
