Ingredients
spaghetti 300 g
frozen peas 250 g
onion 2 (chopped)
mixed chillies 1 (chopped)
black olives 60 g (sliced)
canned tuna 2 can (drained)
lemon 1 (juice)
ginger & garlic paste 4 tsp
chopped tomatoes 400 g
ground turmeric 1 tsp
ground coriander 1 tsp
ground cumin 1 tsp
garam masala ½ tsp
capers 2
cream cheese 120 g
fresh coriander 1
grated Parmesan to serve
Method
Cook the pasta
Cook the spaghetti according to the packet instructions. Drain when cooked.
Prep the ingredients
Place the frozen peas in a bowl of cold water to defrost. Drain before using.
Peel and chop the onion. Chop the fresh chillies. Slice the olives. Drain the tuna. Juice the lemon.
Cook the sauce
Heat a dash of oil in a frying pan over a medium heat. Add the onions and sauté until golden brown, 6-8 minutes.
Add the ginger and garlic paste, fry for 1 minute.
Add the chopped tomatoes, stir to combine and fry for 1 minute.
Add the turmeric, ground coriander, ground cumin and garam masala, fresh chillies and season with salt. Mix well and cook for 2-3 minutes. If the paste feels too thick, add a splash of water.
Add the drained tuna to the pan and cook for 2-3 minutes. Add the peas, olives and capers, along with a generous glug of water to create the consistency of a thick gravy. Cover with a lid and cook for 3 minutes.
Add the cream cheese and spaghetti, stir to combine.
Plate Up
Plate up the Tuna Masala Pasta - add a splash of lemon juice, top with fresh coriander and Parmesan. Enjoy!
