Jamie’s Tip - One of the most important things to remember is to spread
a thin layer of butter over each slice of bread before adding
your filling – not only will this add flavour, but it will also
protect watery things in the filling from soaking through
and making your sandwich soggy.

Ingredients
unsalted butter 10 g
wholemeal bread 2
mild cheddar cheese 20 g (sliced)
tomatoes 1 (sliced)
black pepper pinch
Method
Prepare
Take the butter out of the fridge so that it can soften ready for spreading.
Lay the slices of *wholemeal bread on a chopping board. Use a regular eating knife to spread the slices of bread lightly with butter, making sure you spread it right to the corners – this will make the bread waterproof.
On a chopping board, use a knife to carefully slice the cheddar so it’s roughly the thickness of a pound coin.
Slice the tomato to a similar thickness as the cheese.
Assemble & serve
Lay half the slices of cheddar evenly over one of the slices of buttered bread.
Arrange the tomato slices on top of the cheese, then season with a small pinch of freshly ground black pepper.
Evenly layer the remaining slices of cheese on top of the tomato.
Place the remaining piece of bread, butter-side down, on top and press down lightly with your hand to stick everything together.
Cut in half or into quarters, then serve straight away on a plate, or wrap it up and chill for later.
