Toasted, crispy and filled with melted cheese, this Cheese, Ham and Courgette Quesadilla is a fun way for children to practise grating cheese and courgette. They can then fill, fold and pan-fry their quesadilla before eating. It's a great way to show children that their food comes from both animals and plants, using simple, tasty ingredients.

Ingredients
grated cheddar cheese 40 g (grated)
courgette ½ (grated)
Finnebrogue Naked deli ham slices 1 slice (chopped)
Crosta Mollica piadina 1
cream cheese 1 tbsp
Method
Prep the ingredients
Grate the cheese(unless already grated) and then grate the courgette using the grater.
Cut the ham (if using) into small squares.
Assemble the quesadillas
Fold the wrap in half and press down on the fold. Open the wrap back up and spread the cream cheese onto one half of the wrap up to the fold line.
On the other half, sprinkle over the grated cheddar cheese, courgette and ham (if using) and then fold the wrap back over.
Cook the quesadillas
Put the quesadilla into a large non-stick frying pan with the grated cheese** side touching the pan and place over a low to medium heat.
Carefully cook for about 4-5 mins until the underside of the tortilla is golden brown and the cheese in the middle has melted.
Carefully turn over using a palette knife or fish slice to cook for a further 4-5 mins until the other side is also golden brown.
Serve
Slide the quesadilla onto a plate and cut in half using a cutlery knife. Eat and enjoy.
