Loaded Chicken Caesar Piadina Flatbreads

Made with 100% durum wheat, Crosta Mollica golden flatbreads are a delicious twist on the classic street food speciality from the Emilia-Romagna region. A lighter take on the classic Caesar, wrapped in a piadina. Filled with tender roast chicken, crisp lettuce, and shavings of Parmesan, plus crispy onions for an irresistible crunch. It’s finished with a lighter, homemade Caesar-style dressing for all the creamy, savoury flavour without feeling too heavy. Simple, fresh, and satisfying. We love this with leftover roast cooked chicken.

Ingredients

  • lemon 1 (zest & juice)
  • garlic cloves 1 (crushed)
  • Greek yoghurt 200 g
  • Dijon mustard ½ tsp
  • Worcester sauce 1 tbsp
  • Parmesan 60 g (shaved)
  • cooked roast chicken breast 2 (sliced)
  • Romaine lettuce 80 g (chopped)
  • cucumber ½ (sliced)
  • Crosta Mollica piadina 4
  • crispy onions 2 tbsp

Method

Make the Caesar-style dressing

  • Zest juice the lemon. Peel and crush the garlic clove.
  • In a bowl mix together the Greek yoghurt, Dijon mustard, Worcester sauce, garlic, lemon zest and juice. We like to start with half the lemon juice then add more as needed. Season with salt and pepper.

Prep the ingredients

  • Chop or shred the cooked roast chicken breast and add to a large bowl.
  • Chop the romaine lettuce and add it to the bowl with the chicken and then pour over the dressing.
  • Slice the cucumber.

Assemble & Plate Up

  • Place a Crosta Mollica piadina in a hot dry frying pan for 1 minute on each side.
  • Then layer the toppings - add the chicken and lettuce mix, top with the cucumber, shavings of *Parmesan and crispy onions**.
  • Repeat until all the piadina are assembled. Fold and serve.
