Who doesn’t love a Chicken Caesar?! It’s so versatile just take out the chicken and have it with fish or just a plain banging salad. It's one of my favourite salads, I hope you love this version, which has miso paste for a delicious boost of umami. The miso adds salt so always taste before adding more.

Ingredients
chicken thighs 600 g
garlic cloves 2 (grated)
mayonnaise 4 tbsp
grated Parmesan 120 g (grated)
anchovies in oil 2
miso paste 2 tsp
bacon 6
croutons 100 g
Romaine lettuce 160 (chopped)
Method
Cook the chicken
Preheat the oven to 200C/180C fan.
Season your chicken thighs with salt. Heat a dash of oil in an ovenproof pan, cook for 2 - 3 minutes, then pop the pan into the oven for 15 - 17 minutes, until the chicken is cooked through. Chop into bite-sized pieces.
Make the dressing
While the chicken is cooking make the dressing. Grate the garlic cloves.
To a large bowl add the mayonnaise, garlic, 2/3 of the Parmesan, half the anchovies and miso paste, then give it a really good mix.
Add a good twist of black pepper and a little splash of water to make the dressing a touch thinner to how you like it.
Cook the bacon
Cook your bacon however you fancy, i like mine crispy.
Plate Up
Chop the Romaine lettuce.
Add the lettuce, chicken, bacon, remaining anchovies to a large bowl, pour over the dressing and toss together. Finish with the croutons and rest of the Parmesan. Tuck in and enjoy!
