An absolute classic British Chinese takeaway favourite, chicken chow mein is a dish I’ve always loved and now you can cook it at home too! A recipe like this relies on getting all of the ingredients ready to go, this is what makes the cooking time so speedy. All cooked in one wok or pan, this is the literal definition of a speedy supper.

Ingredients
onion 1 (sliced)
garlic cloves 2 (crushed)
spring onions 6
chicken thighs 4 (sliced)
egg noodles 400 g
soy sauce 3 tbsp
beansprouts 50 g
sugar 2 tsp
sesame oil 2 tsp
Method
Prep the ingredients
Peel and dice the onion. Peel and crush the garlic. Chop the spring onions.
Slice the chicken thighs.
Cook the noodles
Cook the egg noodles according to the packet instructions.
Once cooked, drain and place them into a bowl with a splash of oil to prevent them sticking.
Cook the dish
Heat a dash of oil in a large frying pan or a work over a medium heat.
Add the chicken and cook until golden (around 3-5 minutes).
Add the onion, garlic and fry for a minute. Add the noodles, soy sauce and the beansprouts, stir to combine.
Add the sugar, sesame oil and spring onions. Cook for another minute.
