These scrummy air-fried chilli con carne meatballs blend the rich, smoky flavours of traditional chilli con carne with the satisfying bite of tender, juicy meatballs. This recipe is both hearty and hassle-free, thanks to the air fryer. They are so addictive, you’ll be making these every week! It's a great recipe to prep the night before. If you are using a dual air fryer, you can split the recipe between the two drawers. Please note - you'll need a blender for this recipe. beef mince 500 g
ground cumin 2 tsp
onion granules 1 tsp
garam masala 1 tsp
chilli powder 1 tsp
chilli flakes 1 tsp
chopped tomatoes 400 g
roasted red peppers 200 g
paprika 1 tsp
sugar 1 tsp
ground coriander 1 tsp
Worcester sauce 2 tsp
red kidney beans 400 g (drained)
basmati microwave rice 500 g
sour cream 2 tbsp
fresh coriander 1 handful (chopped)
grated cheddar cheese 1 handful
jalapeños 1 tbsp
avocado 1 ½ (sliced)
Method
Preheat your air fryer to 200°C for 3 minutes and remove the crisper plate.
In a large bowl, mix the beef mince with the cumin, onion granules, garam masala, chilli powder, chilli flakes and a pinch of salt and pepper.
Lightly spray with oil and arrange the meatballs in the air fryer basket or your ovenproof dish, in a single layer with a little space between each. Cook for 3–5 minutes, shaking the basket halfway through, or turning if using a dish, and cook until the balls are starting to turn golden.
Meanwhile, make your sauce by blitzing together the chopped tomatoes, roasted red peppers, paprika, ground coriander, worcester sauce, plus a dash of water, in a blender until smooth.
Pour the sauce over the meatballs and red kidney beans over the meatballs and stir. Cook for a further 8–10 minutes, or until the meatballs are cooked through, and the sauce is thick.
Cook the basmati microwave rice according to the packet instructions.
Serve the meatballs with the rice, sourcream, fresh coriander, grated cheddar, jalapeños and avocado.
