Cheesy Chive Coleslaw

This tasty Cheesy Chive Coleslaw is a simple, no-cook dish made from a handful of affordable, everyday ingredients – crunchy carrot and cabbage, cheddar and chives in a cool mayonnaise-and-yoghurt dressing. Children practise coarsely grating firm carrot and cheese, then snipping cabbage and chives into fine shreds with scissors, building dexterity and control as they work.

Ingredients

  • carrot 1 (peeled)
  • mild cheddar cheese 30 g (grated)
  • white cabbage ¼ (shredded)
  • fresh chives 1 (chopped)
  • mayonnaise 50 g
  • natural yoghurt 50 g
  • demi baguette ½ (sliced)

Method

Make the coleslaw

  • Peel the carrot using the swivel peeler.
  • Grate the carrot with the coarse side of the grater and put it into the mixing bowl.
  • Now grate the mild cheddar cheese and add it to the bowl with the carrot.
  • Peel a few outer layers off the white cabbage then stack them on top of each other and using the scissors, snip them into fine shreds into the carrot and cheese bowl. Continue with all the other cabbage leaves discarding the tough inner core.
  • Using the scissors, snip the fresh chives into the bowl.
  • Add the mayonnaise and yoghurt into the bowl of vegetables and cheese and mix together well with the spoon.

Serve

  • Divide the coleslaw between plates with some slices of baguette to spoon onto.
  • Eat and enjoy!
