This is a speedy and super delicious dinner. Cooking your gnocchi in an air fryer is such a great kitchen hack, you get crispy gnocchi which work so well with this creamy tomato sauce. On the table in 25 minutes!

Ingredients
gnocchi 800 g
cajun seasoning 4 tsp
dried oregano 1 tbsp
onion 1 (diced)
fresh basil 1 handful (chopped)
garlic paste 2 tsp
smoked paprika 1 tsp
tomato purée 2 tbsp
crème fraîche 140 g
grated Parmesan to serve
Method
Prep & cook the gnocchi
In a large bowl combine the gnocchi, a dash of oil, half of the Cajun seasoning, a third of the oregano and season with salt.
Place the gnocchi in an air fryer drawer and cook for 15 minutes at 200°C, shaking frequently.
Prep the rest of the ingredients & cook the tomato sauce
Meanwhile, peel and dice the onion. Chop the basil.
Make the tomato sauce: Heat a dash of oil in a large frying pan over a medium heat. Add the onion and garlic paste and fry for a few minutes until the onion starts to soften.
Add the rest of the Cajun seasoning, oregano and smoked paprika, season with salt, and mix well to coat the onions.
Add the tomato puree and 200ml water, simmer for 2-3 minutes. Stir in the crème fraiche, then the basil and gnocchi.
Plate up
Plate Up: Serve the gnocchi topped with the grated Parmesan.
