A creamy chicken tikka sauce with your favourite pasta - meet your new midweek hero recipe! The flavours of chicken tikka turned into a super easy pasta dish. We’re using a jar of tikka masala paste for an easy flavour hack, and it takes just 30 minutes to whip this up and get it on the table.

penne pasta 300 g
onion 2 (sliced)
chicken thighs 500 g (chopped)
tikka masala paste 4 tbsp
cream 100 ml
spinach 150 g
grated Parmesan 50 g (grated)

Method
Cook the pasta according to the packet instructions.
Meanwhile, thinly slice the onion and chop the chicken into bite sized pieces.
Heat a dash of oil in a frying pan on a medium heat, add the onion and cook for 5 minutes, until starting to soften. Then add the chicken into the pan with the tikka masala paste and cook for another 8 minutes.
Pour in the cream along with the spinach and 50ml water per serving. Mix well to combine then simmer gently for 4 minutes, or until the chicken is cooked through.
Stir the pasta into the pan. Plate up and scatter with the Parmesan. Enjoy!
