A 6 ingredients traybake hero that's budget friendly and ready in 30 mins. The freshness of the smashed peas adds a pop of vibrancy. You can sub the vegetables with your favourites, play around with spices and types of cheese you use for this bake. Please note you will need a food processor, or you can mash the peas with a fork too.

Ingredients
red onion 1 (chopped)
bell pepper 2 (chopped)
gnocchi 800 g
dried oregano ½ tbsp
frozen peas 200 g
mozzarella cheese ball 200 g (torn)
Method
Preheat the oven & prep the ingredients
Preheat the oven to 190°C.
Peel and chop the onion. Deseed and chop the bell pepper.
Roast the vegetables
Place the vegetables into a large tray, drizzle with some oil, season with salt and pepper and roast for 10 minutes.
Prep the gnocchi
While the vegetables are roasting, pour boiling water over the gnocchi, leave to stand for 3 minutes then drain.
Make the pea smash
Pour boiling water over the frozen peas, leave to stand for 2-3 minutes, then drain.
Add the peas to a blender or food processor, and blend with a dash of oil, dash of water. Season with salt and pepper to taste. (or you can mash them really well).
Finish the bake
After 10 minutes, add the gnocchi to the tray, scatter over the torn mozzarella sprinkle over the oregano and roast for another 15 minutes.
Plate up
Take the tray out of the oven, dot with the pea smash, serve and enjoy!
