Honestly, this Miso Aubergine is one of my most favourite recipes to date. There is minimal prep required, the oven does the heavy lifting on this one. Miso adds a delicious depth of flavour. It’s a winner of a recipe - I guarantee you’ll be making it time and time again!

aubergine 4 (sliced)
miso paste 4 tbsp
tamari 2 tbsp
maple syrup 2 tbsp
basmati microwave rice 500 g
olive oil 2 tbsp
Method
Prep & cook the aubergines
Preheat the oven to 200°C.
Slice the aubergines in half lengthways. Slice deep criss-cross cuts into the flesh side, with a sharp knife.
Pop the aubergines onto a large baking tray and bake for 20 minutes.
Make the miso glaze
Combine the miso paste, tamari, maple syrup and olive oil in a small bowl.
Take the aubergines out of the oven and spread the miso glaze across the scored flesh. Bake for a futher 20-25 minutes. Check after 10 minutes and if the glaze start to burn, cover the aubergines with tin foil.
Cook the rice and plate up
Right before the end of cooking time, microwave the rice according to the packet instructions.
