Warm, golden and dusted with cinnamon sugar, this French Toast with Cinnamon & Berries soaks thick bread in a sweet, spiced custard before frying it until crisp at the edges and topping it with fruit. Children practise sifting icing sugar through a sieve for an even, snowy dusting over the berries and finished toast. frozen berries 40 g
icing sugar 10 g
egg 1 (whisked)
caster sugar 20 g
milk 80 ml
ground cinnamon ¼ tsp
white bread 2
vegetable oil 2 tbsp
Method
Defrost & prep the berries
Defrost the frozen berries.
Sift half the icing sugar over the fruit and then use a fork to break up the frozen berries and mix in with the icing sugar.
Soak the French Toast
Crack the egg into a small bowl and use a clean fork to whisk it together.
Tip the egg into the shallow dish then add the caster sugar, milk and ground cinnamon then mix together with the fork until well combined.
Lay the two slices of bread into the custard for 2 mins then turn over carefully and wait another 2 mins so the custard soaks into the bread evenly.
Cook the French Toast
Heat half the vegetable oil in a large frying pan over medium heat and carefully put one slice of bread into the frying pan.
When the bread is golden on the bottom, carefully turn it over and cook the other side.
Put the cooked piece on a plate then add the other tablespoon of oil to the frying pan and cook the second piece of bread.
Serve
Serve the French Toast topped with a spoonful of the fruit and a dust of the leftover icing sugar.
