This traybake brings together a perfect blend of coconut milk, warming garlic and ginger, fluffy rice and crispy dumplings. A one pan wonder that will leave everyone satisfied and full. We've kept this one veggie but you can just swap for your preferred dumplings and add any extra leftover veg too. Please note - the timings given are for using precooked rice -if you are using dry rice please cook the dish for longer.

bell pepper 1 (chopped)
spring onions 4 (chopped)
garlic cloves 2 (crushed)
ginger 10 g (grated)
coconut milk 400 ml
ground turmeric 1 tsp
mild curry powder ½ tsp
basmati microwave rice 500 g
vegetable gyoza dumplings 270 g
sesame oil to garnish
Method
Preheat the oven & prep the ingredients
Preheat the oven to 200°C/180°C fan.
Dessed and chop the bell pepper. Chop the spring onions. Peel and crush the garlic. Peel and grate the ginger.
Assemble and cook the traybake
In a deep baking tray combine the coconut milk, white parts of the spring onions (you’ll use the green parts to garnish the finished dish), garlic, ginger, ground turmeric and curry powder, season with salt.
Add the microwave basmati rice, bell pepper and top with the dumplings.
Bake for 12-15 minutes until the dumplings are cooked through.
Plate up
Serve the Golden Dumpling & Rice Traybake topped with the remaining spring onions and a drizzle of sesame oil. Enjoy!
