red onion 1 (sliced)
bell pepper 2 (sliced)
chicken breast 400 g (chopped)
mild cheddar cheese 50 g (grated)
tomato purée 2 tbsp
smoked paprika 2 tsp
fajita seasoning 1 tbsp
gnocchi 500 g
chicken stock cube 1
cream cheese 50 g
Method
Prep & bag the Ingredients
Peel and slice the red onion. Slice the bell peppers. Chop the chicken into bite size pieces. Grate the cheddar cheese.
Add the red onion, bell pepper, chicken, tomato puree, chicken stock cube, smoked paprika and fajita seasoning to a freezer bag. Shake to cover all ingredients and add some salt and pepper if you like too.
Place in the fridge or freezer, until you want to use it. This will keep in the freezer for 1 month and in the fridge for up to 3 days. If you freeze the bag, please ensure you fully defrost it before cooking.
Cook the Dish
When you're ready to cook the dish: Heat a dash of oil in a large pan (with a lid) over a medium heat. Add the bag ingredients to the pan and cook for 8 minutes.
Add the gnocchi and 100ml boiling water per serving to the pan (so if you’re cooking for 4 people you’ll need 400ml). Simmer for 5 -6 minutes, until the gnocchi is cooked.
Stir in the cream cheese, mix well then check the seasoning and adjust to taste. Cook for another 2 minutes.
Plate Up
Serve the Grab & Go Chicken Fajita Gnocchi with a sprinkling of grated cheddar cheese. Enjoy!
