Ingredients
beef mince 500 g
Italian seasoning 2 tsp
garlic granules 1 tsp
bell pepper 1 (diced)
tomato passata 500 g
gnocchi 500 g
cream 100 ml
spinach 1 handful
Parmesan 60 g (grated)
Method
Prep the meatballs
In a large bowl, combine the beef mince, half of the Italian seasoning and garlic granules. Season with salt and pepper, then shape into meatballs (4 per serving).
Prep the bag
Deseed and dice the bell pepper. Add the meatballs, bell pepper, tomato passata and the remaining Italian seasoning to a freezer bag. Shake to cover all ingredients and add some salt and pepper if you like too.
Place in the fridge or freezer, until you want to use it. This will keep in the freezer for 1 month and in the fridge for up to 3 days. If you freeze the bag, please ensure you fully defrost it before cooking.
Cook the dish
When you're ready to cook the dish: Heat a dash of oil in a large pan (with a lid) over a medium heat. Add the bag ingredients to the pan and simmer for 15 minutes.
Add the gnocchi and cook for another 5 - 7 minutes. Then stir in the cream and spinach and cook until the spinach is wilted.
Sprinkle the Parmesan on top then plate up and enjoy!
