Ingredients
frozen raspberries 100 g
self raising flour 125 g
milk 240 ml
egg 1
butter 1 tbsp (melted)
Greek yoghurt 4 tbsp
Method
Make the batter
If you are using the frozen raspberries you can defrost them now.
Use a cup or mug to weigh out equal amounts of the self raising flour and milk - 1 cup of each.
Tip the self raising flour into a jug and pour in the milk.
Crack in the egg and whisk well until you have a smooth batter with no lumps.
Cook the pancakes
Place a large non-stick frying pan on a medium heat with a small knob of butter (or use olive oil), then, once melted, add large spoonfuls of batter to the pan.
Wait for little bubbles to form on the surface, flip them over and cook until golden on the other side, then repeat.
Transfer to a plate and repeat with the remaining batter, adding a little more butter or oil to the pan as needed.
Serve
Serve the pancakes warm with a dollop of Greek yoghurt and your favourite seasonal fruit or the frozen raspberries.
