Loaded Green Goddess Chickpea Salad

Level up your lunches, dinners and summer BBQs with this high-protein, high-fibre recipe that's perfect for meal prep and packed with fresh flavour. Chickpeas are tossed in a vibrant green goddess dressing made with creamy Dr. Will's Avocado Oil Mayo, fragrant basil and tahini, creating the ultimate rich and tangy coating. Loaded with crunchy cucumber, crisp white cabbage, gherkins and spring onions. Every bite is packed with texture and flavour. You can play around with the filling and use up your favourite leftovers too - kale or any green leaves, capers, peppers would also work well. Versatile and satisfying, this loaded salad can be enjoyed straight from the bowl, spooned into sandwiches, stuffed into pittas, wrapped in flatbreads or served alongside your favourite BBQ dishes. It's a fresh, nourishing recipe you'll want to make on repeat all summer long. You will need a blender or food processor to make the dressing.

Ingredients

  • garlic cloves ½ (chopped)
  • spinach 80 g
  • fresh basil 1 handful (leaves picked)
  • Dr. Will's avocado oil mayo 3 tbsp
  • tahini 1 tbsp
  • Greek yoghurt 150 g
  • lemon ½
  • chickpeas 400 g (drained)
  • cucumber 1 (diced)
  • white cabbage 150 g (shredded)
  • gherkins 50 g (chopped)
  • spring onions 4 (chopped)
  • pitta 4

Method

Make the green goddess dressing

  • Peel and roughly chop the garlic clove.
  • Add the garlic to a blender or food processor, with the spinach, fresh basil, Dr Will's Avocado Oil Mayo, tahini and Greek yoghurt. Blitz until just smooth then season with salt and pepper and the lemon juice.

Make the filling

  • Drain the chickpeas and add them to a large bowl.
  • Dice the cucumber and thinly shred the white cabbage. Chop the gherkins and spring onions. Add them all to the bowl and pour over the dressing, mixing well together.
  • Adjust the seasoning to taste how you like it.

Assemble & Plate Up

  • Stuff the filling into your favourite sandwich bread, wraps, pitta or even into lettuce leaves for a lighter option.
  • Then you’re ready to enjoy! Keeps in the fridge for up to 3 days.
