A deliciously vibrant Italian-inspired piadina filled with juicy chargrilled aubergine, courgette and mixed peppers, basil pesto and shavings of nutty Parmesan. Wrapped in a soft piadina, this satisfying combination is a premium lunchtime and dinner option. Made with 100% durum wheat, these golden flatbreads are a delicious twist on the classic street food speciality from the Emilia-Romagna region.

Ingredients
courgette ½ (sliced)
aubergine ½ (sliced)
chargrilled mixed peppers 80 g (sliced)
Crosta Mollica piadina 2
green pesto 50 g
Parmesan 20 g (shaved)
Method
Prep the vegetables
Slice the courgette diagonally. Slice the aubergine into rounds.
Drizzle the veg with olive oil and season with salt and pepper.
Heat a griddle pan (or frying pan) on a medium-high heat.
Once hot, add the aubergine and cook for a few minutes on each side until lightly charred. Then cook the courgette for 1 - 2 minutes on each side (they will take less time than the aubergine).
Drain and slice the chargrilled peppers.
Assemble & Plate Up
Place a Crosta Mollica piadina in a hot dry frying pan for 1 minute on each side.
Then layer up your toppings - we love to start with a generous spoonful of pesto, then add the veg, followed by Parmesanshavings and another drizzle of pesto.
