Fajitas meet gnocchi and cheese and bacon = the most delicious one pan dish. Crispy bacon, peppers and red onion in a tomato base with fajita seasoning. bell pepper 2 (sliced)
red onion 1 (sliced)
bacon 250 g (chopped)
fajita seasoning 1 tbsp
gnocchi 800 g
tomato passata 500 g
chicken stock cube 1 (crumbled)
cream cheese 100 g
fresh parsley 1 handful (chopped)
grated mozzarella 80 g
Method
Prep the ingredients
Deseed and slice the bell pepper, peel and slice the onion. Chop the bacon into small pieces.
Cook the bacon
Heat a large, deep frying pan over a medium heat. Add the bacon and cook until crispy, around 5 minutes, transfer from the pan and set aside.
Cook the rest of the dish
Add the bell pepper and red onion to the same pan with the fajita seasoning, cook for 5 minutes until the veg starts to soften.
Stir in the passata and gnocchi.
Crumble in the stock cube and pour in 50ml boiling water per person. (E.g. if you are cooking for 4 people you will need 200ml water).
Simmer for 5 -6 minutes, until the gnocchi is cooked. Stir in the cream cheese and mozzarella, then mix well then check the seasoning and adjust to taste. Cook for another 2 minutes.
Plate up
Chop the fresh parsley then scatter over the top. Plate up and enjoy!
