One Pot Cheesy Nacho Beef Rice

All the best bits of loaded nachos, transformed into a proper cosy one-pot dinner. Juicy beef mince and veg are simmered with fajita seasoning, then Veetee steam-filtered basmati rice goes straight in to soak up all that smoky, savoury flavour as it cooks. No separate pots, no extra steps. Finished with melted cheese, of course. Think taco night meets rice bowl comfort - all in one pan. This one is also great for using up leftover veg - you can stir through your favourite greens at the end too. You can also swap the beef for chicken, lamb or pork or veggie mince.

Ingredients

  • red onion 1 (chopped)
  • bell pepper 2 (chopped)
  • beef mince 500 g
  • fajita seasoning 2 tbsp
  • chilli powder pinch
  • beef stock cube 1
  • tinned sweetcorn 200 g (drained)
  • chopped tomatoes 400 g
  • Veetee heat & eat basmati rice pots 500 g
  • grated mozzarella 80 g (grated)
  • spring onions 4 (sliced)
  • tortilla chips 40 g

Method

Prep the ingredients

  • Chop the red onion and bell pepper.

Cook the beef & veg

  • Heat a dash of oil in a large pan or casserole, add the beef mince and cook for 5 minutes, breaking it up with the back of a spoon as it cooks.
  • Stir in the fajita seasoning and chilli powder (you can add more or less chili depending on your taste).
  • Cook for 1 minute, then add the red onion and bell pepper.
  • Make up the beef stock cube with with 200ml boiling water.

Add the rice & finish the dish

  • Add the drained sweetcorn, chopped tomatoes and beef stock to the pan.
  • Crumble the Veetee steam filtered basmati rice into the pan, season with salt and pepper and mix well.
  • Pop a lid on top and simmer gently 3 - 4 minutes. Check the seasoning then adjust to taste.

Finish with the cheese

  • Fluff up the rice with a fork.
  • Scatter over the grated mozzarella then pop the lid back on for another couple of minutes to melt the cheese.

Plate Up

  • Chop the spring onions and scatter them on top with the tortilla chips, then it’s time to plate up and enjoy!
