Arrabbiata is a classic Italian pasta sauce bursting with tomatoes, chilli and garlic. Here we are pairing it with salmon which goes perfectly with this punchy sauce. You can play around with the spice levels making it as fiery or as tame as you like!

Ingredients
garlic cloves 2 (crushed)
salmon 400 g (chopped)
chilli flakes 1 tsp
dried oregano 2 tsp
tomato purée 2 tbsp
chopped tomatoes 400 g
penne pasta 300 g
fresh basil 1 handful (torn)
Method
Crush the garlic and slice the salmon into small pieces
Heat a dash of oil in a large saucepan on a medium heat. Add the garlic, chilli flakes and oregano and cook for 2 minutes. Stir in the tomato puree and cook for 2 minutes, stirring all the time
Stir in the chopped tomatoes and pasta along with 50ml water per serving. Season with salt and pepper. Simmer gently for 15 minutes until the pasta is cooked through, stirring occasionally. You may need to add another dash of water as the pasta cooks
Add the salmon and cook for 5 minutes until it is cooked through, check the seasoning and adjust to how you like it
