This dish is inspired by a traditional Spanish snack - usually made with bread and tomatoes. Here we're using paneer to add a boost of protein, which is just delicious with the fresh tomatoes. Perfect for a refreshing summery dinner - please note this dish is served at room temperature.

Ingredients
tomatoes 300 g (diced)
paneer 400 g (diced)
garlic paste 1 tsp
ground turmeric 1 tsp
mild curry powder 2 tsp
folded flatbreads 4
crispy onions to serve
chilli oil to serve
Method
Grate the tomatoes over a box grater, using the larger holes. Discard the skins. Season the tomato pulp with salt and pepper.
Dice the paneer.
Heat a dash of oil in a large frying pan over a medium heat. Add the ginger and garlic paste and fry for 1-2 minutes until fragrant. Add the turmeric and curry powder and fry for another minute.
Stir in the paneer, coating it in the flavoured oil and fry for 4-5 minutes until browned all over, then mix this into the fresh tomatoes.
Warm up the flatbreads as per packet instructions.
Serve the paneer with the flatbreads and crispy onions sprinkled on top. We love to add a drizzle of chilli oil.
