Pizza Pepperoni Piadina Flatbreads

Made with 100% durum wheat, these golden flatbreads are a delicious twist on the classic street food speciality from the Emilia-Romagna region. A handheld twist on a pizza favourite. All the flavours of a classic pepperoni pizza wrapped in a warm, baked piadina. Filled with rich tomato sauce, melted mozzarella, and spicy pepperoni, topped with a fragrant garlic butter. Then a final sprinkle of cheese and pepperoni and baked until golden and bubbling, on one tray for ease. We love these for meal prep as they can be quickly assembled then popped in the oven or air fryer when you’re ready to cook. Once cooked, add a scattering of fresh basil and tuck in. Trust us when we say these will disappear quickly!

Ingredients

  • butter 2 tbsp
  • garlic granules 2 tsp
  • dried parsley 1 tsp
  • roasted red peppers 150 g (sliced)
  • Crosta Mollica piadina 4
  • grated mozzarella 140 g
  • pecorino 40 g (grated)
  • tomato passata 100 g
  • pepperoni 100 g
  • dried oregano 2 tsp
  • fresh basil 1 handful (leaves picked)

Method

Make the garlic butter

  • Preheat the oven to 190C fan.
  • Melt the butter in a small pan (or microwave) and when foaming stir in the garlic granules and dried parsley, then take the pan off the heat.

Fill the piadina

  • Thinly slice the roasted red peppers. Put the Crosta Mollica piadina on a baking tray.
  • Brush each piadina with the garlic butter, then add a couple tablespoons of the tomato passata on one side and scatter over some grated mozzarella and pecorino .You can add a sprinkle of salt if you like.
  • Add some pepperoni, roasted red peppers and a sprinkle of dried oregano then top with more cheese and fold over the piadina.
  • Brush the top of the piadina with a little more garlic butter, add another sprinkle of cheese and pepperoni. Repeat until all are assembled.

Cook the piadina & Plate Up

  • Bake in the oven for 7 - 8 minutes, until golden and bubbling.
  • Finish with a final drizzle of garlic butter and the fresh basil leaves, then simply tuck in.
