An easy speedy one pan dinner, with only 6 core ingredients. Brimming with fresh vegetables and roasted halloumi. It’s also excellent for meal prep as you can make a large batch then use it for wrap/sandwich fillers, in salads or as a side.

Ingredients
red onion 1 (quartered)
bell pepper 2 (chopped)
courgette 1 (chopped)
halloumi 400 g (torn)
couscous 200 g (drained)
dried oregano ½ tbsp
Method
Preheat the oven & prep the ingredients
Preheat the oven to 200°C/180°C fan.
Chop the bell pepper and courgette (so they are roughly the same size). Peel and quarter the red onion.
Roast the vegetables & cook the couscous
Place the red onion, bell peppers, courgette onto a large baking tray. Scatter over the dried oregano and drizzle with a generous glug of oil, season to taste with salt and pepper. Place in the oven for 15 minutes.
Cook the couscous according to the packet instructions.
Add the halloumi to the traybake
Tear the halloumi into chunks and add it to the traybake, drizzle over a little more oil, then and roast for another 10 minutes.
Add the couscous & plate up
Remove the tray from the oven and stir the cous cous through the vegetables. If you prefer you can serve the couscous on the side.
