Bringing you my new Salmon Tray Bake Recipe! It’s an incredibly simple combination of salmon and roast vegetables that's perfect for an easy dinner. It's naturally gluten and dairy free.

Ingredients
garlic cloves 2 (crushed)
baby potatoes 450 g (halved)
cherry tomatoes 200 g (halved)
broccoli 1 (chopped)
lemon 1 (sliced)
salmon 4
Italian seasoning 2 tsp
fresh parsley 1 handful (chopped)
Method
Preheat the oven and prep the ingredients
Preheat the oven to 200°C.
Peel and crush the garlic. Halve the baby potatoes and cherry tomatoes. Cut the broccoli into florets, chop the stems into small pieces and cook them too.
Juice ½ of the lemon and cut the other half into slices.
Prep the salmon
Place the salmon into a large dish, drizzle it with some oil, coat it with the crushed garlic, Italian herbs and lemon juice, season with salt and pepper. Set aside.
Bake the potatoes
Place the potatoes onto a large baking tray, drizzle the potatoes with some oil, season with salt and pepper and bake for 25 minutes.
Add the remaining ingredients
Remove the tray from the oven.
Add the salmon, scatter the broccoli and cherry tomatoes, add the lemon slices on top and bake for another 15 minutes until the salmon is cooked through.
While the salmon is cooking, finely chop the parsley.
Plate up
Serve the traybake with the fresh parsley scattered on top, and enjoy!
