Fakeaways really came to the forefront in lockdown as everyone was craving their local treat made at home. From this, I’ve taken to having a ‘fakeaway night’ as a bit of a treat. I’m talking a full spread of all your favourite takeaway items, made at home, without breaking the bank. Leading with this salt and pepper chicken is a must!

Ingredients
basmati rice 240 g
bell pepper 2 (chopped)
onion 1 (sliced)
mixed chillies 1 (sliced)
chicken breast 4 (chopped)
plain flour 2 tbsp
Chinese 5 spice 1 tsp
Method
Preheat the air fryer
Preheat the air fryer to 200°C.
Cook the rice
Cook the rice according to the packet instructions. Keep warm once cooked.
Prep the ingredients
While the rice is cooking, deseed and chop the bell peppers. Peel and slice the onion. Deseed and slice the mixed chilli. Cut the chicken breast into bite-sized pieces.
Prep the chicken
To prep the chicken - in a large bowl, combine the plain flour and Chinese 5 spice. Add the chicken pieces and toss to coat.
Cook the chicken
To cook the chicken - place the chicken pieces in the hot air fryer basket, leaving some space between the pieces (you may need to cook in batches). Spray the chicken with some oil.
Cook for 5 minutes, toss the chicken and add the bell peppers, onions and chilli. Cook for another 7-10 minutes until the chicken is cooked (75°C).
Plate up
Plate up the Salt & Pepper Chicken Bites with the rice. Enjoy!
