Simple Salad & Lemon Jam Jar Dressing

A mix of soft round lettuce, little gem and radicchio with a choice of three shake-in-a-jar dressings: yoghurt, balsamic or lemon. This one uses the yoghurt dressing - you can get the other two dressings the app too, simply search for simple salad. Jamie’s Tip - I like to make my dressings in jam jars- you can shake them up easily and any leftovers can be kept in the jars in the fridge. If you prefer you can use an extra little gem lettuce instead of chicory/radicchio.

Ingredients

  • lemon 1 (juice)
  • extra-virgin olive oil 6 tbsp
  • sea salt pinch
  • black pepper pinch
  • butterhead lettuce 1 (leaves picked)
  • little gem lettuce 1 (leaves picked)
  • red chicory 1 (leaves picked)

Method

Lemon Dressing

  • Cut the lemon in half.
  • Squeeze the juice into the jar, using your fingers to catch any pips.
  • Add the extra virgin olive oil and a pinch of sea salt and black pepper to the jam jar.
  • Put the lid securely on the jar and shake well.
  • Have a taste and see whether you think it needs a bit more lemon juice or oil – you want it to be slightly too acidic, so that it's still nice and zingy once you've dressed your salad leaves.

Dress the salad

  • Separate the butterhead lettuce, little gem lettuce and red chicory leaves if using. Pour over the dressing and serve**.
