We love a delicious and simple omelette that only needs a few ingredients. This can be easily customised to your preferences, we're using punchy garlic and fragrant coriander seeds to create warmth and depth of flavour. Served with fresh vegetables with an added bonus of noodles in the eggs.

Ingredients
garlic cloves 2 (crushed)
mixed chillies 1 (chopped)
radish 50 g (sliced)
carrot 2
fresh coriander 1 (chopped)
coriander seeds 1 tsp (crushed)
dried noodles 200 g
pork mince 250 g
egg 8 (beaten)
Method
Prep the ingredients
Peel and crush the garlic cloves. Deseed and chop the mixed chilli (or leave the seeds if you prefer the heat). Thinly slice the radishes. Cut carrots into matchsticks or grate coarsely. Chop the fresh coriander.
Cook noodles
Cook the noodles according to the packet instructions. Place in cold water once cooked, drain before use.
Cook the pork
Heat a dash of oil in a large frying pan over a medium heat. Add the pork mince and fry for 4-5 minutes until brown and crispy.
Add the garlic and coriander seeds and fry for another minute. Tranfer the pork mix from the pan.
Cook the omelettes
Whisk the eggs and the noodles together(2 eggs per person).
Heat a dash of oil in a large frying pan over a medium heat. Cook the omelettes in batches, depending on your pan size, you can either make smaller individual omelettes or larger sharing omelettes.
Pour in the eggs noodle mixture, with a spatula, draw the edges into the middle a couple of times. Cook until it is beginning to set around the edges, around 4-5 minutes. Scatter over the cooked pork and the other toppings. Then plate up and enjoy!
