cherry tomatoes 250 g (sliced)
strawberry 300 g (sliced)
fresh basil 10 g (torn)
olive oil 3 tbsp
balsamic vinegar 1 tbsp
feta 80 g (crumbled)
sea salt pinch
Method
Slice the cherry tomatoes in half and sprinkle with a little salt. Thinly slice the strawberries
Pick the basil leaves and tear any of the larger ones
In a bowl, make the dressing by whisking together the olive oil and balsamic vinegar. Season to taste with salt and pepper. This dressing keeps well so if you like you can make a large batch and store in the fridge for a week
Assemble the salad by layering the strawberries and tomatoes on a serving plate. Crumble the feta on top. Drizzle over the dressing and scatter over the basil. This salad is best eaten straight away. If you are preparing it in advance, simply add the dressing when you are ready to serve!
