red onion 1 (chopped)
bell pepper 1 (chopped)
chicken thighs 600 g (chopped)
cornflour 2 tbsp
pineapple juice 75 ml
ketchup 4 tbsp
honey 2 tbsp
soy sauce 2 tbsp
basmati microwave rice 500 g
sesame seeds to garnish
Method
Preheat the oven & prep the ingredients
Preheat the oven to 200°C/180°C fan.
Chop the red onion and the bell pepper into large chunks. Cut the chicken thighs into bite size pieces.
Prep the sauce & cook the dish
Toss the chicken in the cornflour and season with salt and pepper.
Add the veg and chicken to a large oven tray, drizzle with a dash of oil and bake for 20 minutes.
In bowl combine the pineapple juice, ketchup, honey and soy sauce.
After 15 minutes, pour the sauce on the veg and chicken coating everything. Place the tray back in the oven for another 5 minutes.
Cook the rice according to the packet instructions.
Plate up
Scatter the sesame seeds over the sweet and sour chicken, then plate it up with the rice. Enjoy!
