We, of course, couldn't not make the Viral Courgette wrap! Thinly sliced courgette is layered with grated cheddar or mozzarella, then baked before simply using it as a low carb, high protein wrap. Genius! Ours combines the freshness of crisp vegetables like lettuce, tomatoes, and avocado with the creamy richness of yoghurt and melty cheddar. Make it your own using your favourite cheese, fillings and condiments.

Ingredients
courgette 3 (sliced)
mild cheddar cheese 100 g (grated)
little gem lettuce 2 (chopped)
tomatoes 200 g (chopped)
avocado 1 ½ (chopped)
hot sauce 80 g
Method
Preheat the oven
Preheat the oven to 200°C/180°C fan.
Thinly slice the courgettes, you can use a sharp knife of mandolin to do this. Grate the cheddar.
Place the courgette slices onto a baking tray, overlapping each other in a scallop pattern to create 2 large rectangles - you might need to use 2 trays depending on the size of your trays.
Season the courgettes with salt and pepper and drizzle over a dash of oil. Sprinkle with the cheddar and bake for 15 minutes. Leave it to cool for a few minutes before trying to add the fillings or roll it up as a wrap.
Prep the rest of the ingredients
Chop the gemlettuce and tomatoes. Destone the avocado, scoop out and slice the flesh.
Assemble the wraps
Spread the courgettewraps with some hot sauce, top with the gem lettuce, tomatoes and avocado. Roll up tightly into a wrap and cut each one into 2 wraps.
