Ingredients
puff pastry 320 g
tomatoes 120 g (sliced)
Dijon mustard 1 tbsp
grated cheddar cheese 125 g
dried oregano 2 tsp
milk 30 ml
mixed leaf salad to serve
Method
Preheat the oven & prep the ingredients
Preheat the oven to 200°C/180°C fan.
Thinly slice the tomatoes.
Prep and bake the turnovers
Unroll the pastry and cut into 4 even rectangles. Place the pastry pieces onto a baking tray.
Spread each slice with a bit of Dijon mustard, top with tomatoes ,cheddar and dried oregano.
Fold the opposite corners of each slice of pastry together to create a turnover. Lightly brush any exposed pastry with a dash of milk.
Cook them in the oven for 15 - 20 minutes, until golden brown.
Plate up
Serve the Cheese & Tomato Turnovers with the mixed leaf salad. Enjoy!
