Upside Down Lime Cheesecake

Cool, creamy and sharp with fresh lime, this Upside Down Lime Cheesecake layers a whipped citrus-cream filling over a scatter of buttery biscuit crumbs, no baking required. Children practise zesting a lime, whisking cream by hand until thick and folding it in gently to keep the mixture light and airy. It's also a way into food labels, reading the nutritional information and the traffic-light system that help us understand what's in what we eat.

Ingredients

  • digestive biscuits 1
  • lime 1 (zest & juice)
  • cream cheese 100 g
  • icing sugar 1 tbsp
  • double cream 150 ml (whisked)

Method

  • Place the digestive biscuit in a bowl and crush with the end of a rolling pin.
  • Grate the zest of the lime then cut the lime in half horizontally and squeeze the juice.
  • Place the cream cheese into a mixing bowl and give a little stir to soften. Sift over the icing sugar and stir to mix well.
  • Stir the lime zest and juice into the cream cheese mixture.
  • Whip the double cream with a hand whisk until thick.
  • Fold half the whipped cream into the cream cheese mixture using a metal spoon then fold in the other half of the cream.
  • Using two spoons, carefully spoon the mixture into two pots.
  • Sprinkle the biscuit crumbs on the top.
  • Eat and enjoy!
