Sweet, buttery and made for sharing, these Vanilla Biscuits are a lovely introduction to baking. Children practise sifting flour, rolling out their dough and cutting neat shapes with a cutter, trimming carefully to keep waste to a minimum. Then use the recipe to explore eating together sociably, with a batch of biscuits made to share with friends. Allow the butter to soften before using.

butter 100 g
caster sugar 100 g
egg 1 (beaten)
vanilla extract 1 tsp
plain flour 150 g
Method
Preheat the oven & line the baking tray
Line a tray with baking parchment.
Preheat the oven to 180°C.
Make the dough
Place the butter and caster sugar into a mixing bowl and beat thoroughly with a wooden spoon until the mixture is pale and fluffy.
Crack the egg into a small bowl and beat with a fork, add the vanilla extract and mix again.
Sift the plain flour over the butter and caster sugar using the sieve and add the egg bit by bit, you may not need all of it.
Mix thoroughly until a firm dough is formed – you may need to gradually add some more egg.
Using your hands, bring the mixture together in the bowl to form a ball of dough.
Roll out the biscuits
Sprinkle over a little extra plain flour over the worktop then place the dough in the centre and press lightly into a smooth disc shape.
Using a rolling pin, roll out to about ½ cm thickness, turning the dough from time to time to make sure it doesn’t stick.
Carefully cut out biscuit shapes using the cutter and place onto the lined tray.
Sprinkle a little caster sugar over the biscuits.
Bake the biscuits
Bake for 8-10 mins until golden brown around the edges.
Cool on the tray until firm and crisp. Eat and enjoy!
