This light, bright twist on a classic crepe is a delicious way to start your day. Try it topped with honey, Greek yoghurt or chopped nuts! This recipe makes approximately 12 crêpes .

orange 3 ½
plain flour 100 g
egg 2
whole milk 210 ml
Method
Zest the oranges, then slice them into wedges or slices.
Add the plain flour and orange zest with a pinch of salt to a bowl. Make a well in the centre and crack the eggs into it. Whisk in the milk until the batter is smooth.
Heat a frying pan over a medium heat, add a little oil or butter, and swirl the pan so it is evenly coated.
Add a small ladle of batter, and tilt the frying pan to spread the batter evenly.
Cook for 1-2 minutes on one side until is golden, then flip (if you're brave!) or carefully turn it with a spatula.
Fold each crêpe into quarters , place on a warm plate and cover with a clean tea towel. Repeat until all the batter is used.
Plate up the crêpes with the orange slices. Tuck in and enjoy!
