When the kids are begging you for dessert, this simple pudding super star can be prepped in about 5 minutes flat and maximises storecupboard ingredients. It's a great one to have on standby to whip out! I love it with custard or ice cream.

Ingredients
plain flour 80 g
caster sugar 60 g
baking powder 1 tsp
milk 80 ml
vanilla extract 1 tsp
butter 30 g (diced)
tinned peach slices 800 g (drained)
demerara sugar to garnish
ready to serve custard to serve
Method
Prep the batter
In a large bowl combine the flour, caster sugar and baking powder.
Whisk in the milk and vanilla extract until you have a smooth batter. Set aside.
Prep the cobbler
Roughly dice the butter. Drain the peaches.
Place the butter in a glass or ceramic baking dish as wide as possible that will still fit in your large air fryer.
Add the drained peaches to the dish and cook in the air fryer for 5 minutes at 200°C. This will melt the butter and preheat the dish.
Finish the cobbler
After 5 minutes, carefully stir the peaches and butter. Pour the batter all over the peaches, spread it out with a spatula so that you can see peaches peeking through.
Turn the temperature down to 160°C and cook for 15-17 minutes until the batter is cakey and has risen.
Plate up
Sprinkle the cobbler with some demerara sugar (optional) and serve with custard (or ice cream!). Enjoy!
