Banana & Kiwi Muffins

A brilliant way to rescue fruit that may otherwise be thrown away, these Banana & Kiwi Muffins turn overripe bananas and squashy kiwis into something delicious. Children practise mashing the fruit with a fork, then stir it into a simple batter and spoon it into cases ready to bake. Then use the recipe to explore how we can avoid wasting food, turning soft, spotty fruit into a proper treat. Makes 6 muffins.

Ingredients

  • kiwi 1 (chopped)
  • banana 2
  • butter 50 g
  • egg 1 (beaten)
  • self raising flour 125 g
  • caster sugar 75 g
  • baking powder 1 tsp

Method

Preheat the oven & prepare the muffin cases

  • Prepare a muffin tray with 6 paper cases.
  • Preheat the oven to 180°C

Make the muffin batter

  • Scoop the kiwi out of the skins using a teaspoon and cut into small pieces.
  • Peel the banana, put into a bowl and mash with a fork.
  • Add the butter to the bowl and mash into the banana. (you can use margarine instead of butter too)
  • Crack the egg into a small bowl and beat with the fork, then add to the banana mixture** and stir well.
  • Sieve in the self raising flour, caster sugar and baking powder and stir together until smooth.
  • Finally stir in the pieces of kiwi.
  • Spoon the mixture between 6 large muffin cases and cook for 20-30 mins until golden and brown.
