Chicken Caesar Orzo is a combination of orzo and chicken, paired perfectly with crunchy croutons and fresh gem lettuce, all brought together with a creamy homemade Caesar dressing. It's simple to prepare, taking just 25 minutes between you and a delicious dinner!

Ingredients
orzo 200 g
chicken breast 2 (sliced)
sourdough 100 g
Parmesan 80 g (grated)
mayonnaise 100 g
Dijon mustard 1 tsp
Worcester sauce 2 tsp
little gem lettuce 2 (leaves picked)
cherry tomatoes 200 g (halved)
Method
Cook the orzo
Cook the orzo according to the packet instructions - cook in simmering water for 10 - 12 minutes until tender. Drain once cooked.
Cook the chicken & croutons
While the orzo is cooking, preheat the air fryer to 180°C.
Chop the sourdough into bite-size pieces and drizzle with some oil.
Thinly slice the chicken, drizzle with some oil and season with salt.
Air fry the chicken for 10-12 minutes until cooked through, shaking halfway through.
Add the croutons after 6 minutes and air fry until golden. Note - if your air fryer has 1 drawer, you can cook the chicken in the same drawer as the croutons - you may need to increase the cooking time by a few minutes to ensure it all cooks evenly.
Make Caesar dressing
While the chicken is cooking grate the Parmesan, unless already grated.
To make the Caesar dressing, in a bowl mix together the mayonnaise, Dijon mustard, Worcestershire sauce and half the Parmesan. It should be the consistency of yoghurt - if needed add a splash of water.
Prep the rest of the ingredients
Separate the little gem lettuce leaves. Halve the cherry tomatoes.
Assemble & Plate Up
Plate up the Chicken Caesar Orzo - top the little gem leaves with the orzo, chicken, croutons, cherry tomatoes, drizzle with the Caesar dressing and finish with the remaining Parmesan. Enjoy!
