Part of our Dinner in 20 series - this one pan dinner uses chilli jam for the ultimate flavour hack. The sweet spiciness from the chilli jam, smoky chorizo and crème fraîche combine to deliver a sauce that’s so tasty. On the table in 20 minutes, save this one for your next easy midweek dinner inspo. If you like, you can add extra vegetables to this - peppers, sweetcorn and courgette would work well!

Ingredients
red onion 1 (diced)
chorizo 150 g (diced)
sweet chilli jam 2 tbsp
crème fraîche 80 ml
gnocchi 800 g
spinach 2 handful
Method
Prep the ingredients
Dice the red onion and chorizo (if not already diced).
Start the sauce
Add the chorizo to a large frying pan on a medium heat and cook for 3 minutes until the oil starts to come out of the chorizo (there’s no need to add extra oil), give it a little stir as it cooks.
Stir in the red onion (let it soak up all that delicious chorizo oil) and cook for 2 minutes then add the gnocchi. Cook for a few minutes, until the gnocchi starts to take on the colour of the chorizo oil.
Add the chilli jam and crème fraîche
Stir in the chilli jam along with the crème fraîche and 75ml water per serving (e.g. for a serves 4 you will need 300ml water). Simmer gently for 5 minutes, check the seasoning and adjust to taste. We love to add a generous pinch of cracked black pepper.
Add the spinach and plate up
Stir through the spinach and cook for a minute until it starts to wilt.
