This recipe is part of our 30 Min Dinners series and air fryer recipes collection. It's the crunchiest chicken you can make in your air fryer! Brush the chicken with a little mayonnaise, then coat in the crunchy, herby cornflake topping. Cooked until crispy in the air fryer, served alongside smoky sweet potato fries. This one is a real favourite in our test kitchen and hopefully soon with you too!

Ingredients
sweet potato 600 g (sliced)
chicken breast 400 g
paprika 2 tsp
dried oregano 2 tsp
mayonnaise 2 tbsp
cornflakes 80 g (crushed)
mixed leaf salad to serve
cornflour 2 tsp
Method
Make & cook the sweet potatoes fries
Heat the air fryer to 200°C. Wash the sweet potatoes (no need to peel them), then slice into thin fries.
Drizzle them with a dash of oil then toss them in the cornflour and paprika. Add them to your air fryer drawer and cook for 20 minutes at 200°C. You can also cook them in a conventional oven at 200°C/180°C fan for approx 20 - 25 minutes.
Make & cook the chicken
Tip the cornflakes into a bowl or shallow plate, crush them with your hands into small pieces and mix with the oregano.
With a rolling pin, bash the chicken to flatten it, so that it is thinner all over, this will make it cook more quickly. Brush the chickenwith the mayonnaise, season with salt and pepper, then dip into the crushed cornflakes. Press down gently to coat the chicken fully.
Cook the chicken in the air fryer for 10 - 12 minutes, at 200°C after this time, turn the chicken over and cook for a further 4 minutes.
If you have another air fryer drawer you can cook them in this, or else place them on top of the sweet potatofries to cook. If you're using a conventional oven you can cook the chicken in this for approx 20 minutes, at 200°C/180°C fan.
Plate Up
Plate up the cornflake chicken with the sweet potatofries and mixed leaf salad. You can serve alongside extra mayo for dipping if you like, or your favourite condiment Enjoy!
