Made with 100% durum wheat, Crosta Mollica golden flatbreads are a delicious twist on the classic street food speciality from the Emilia-Romagna region. This vegetarian twist on coronation chicken swaps in protein-rich chickpeas for a satisfying alternative. Tossed in a creamy coronation-style dressing with spinach folded through for freshness. A scattering of toasted almonds, crisp cucumber and tangy pickled red onions add the finishing touch. Optional sultanas or red grapes can be folded through the coronation chickpea mix also. For a lighter dressing we’re pairing crème fraîche with mayonnaise, you could also use Greek yoghurt.

red grapes 80 g (sliced)
mayonnaise 80 g
crème fraîche 80 g
mild curry powder 1 tbsp
ground turmeric ½ tsp
ground cinnamon pinch
mango chutney 2 tbsp
chickpeas 400 g (drained)
red onion 1 (sliced)
white wine vinegar 2 tbsp
sugar pinch
cucumber ½ (diced)
almonds 2 tbsp (toasted)

spinach 1 handful
Method
Prep the coronation chickpeas
Slice the red grapes.
In a bowl, mix together the mayonnaise, crème fraîche, mild curry powder, ground turmeric, ground cinnamon, and mango chutney.
For a combination of textures we like to crush some of the chickpeas and leave the rest whole. Add the chickpeas to the dressing.
Stir through the red grapes then season the mix to taste with salt and black pepper.
Prep the rest of the ingredients
For the pickledred onion - thinly slice the red onion and add it to a bowl, sprinkle over the white wine vinegar with a pinch of salt. Massage the vinegar into the onionslices then set it aside to pickle, you can also add a pinch of sugar if you like for a touch of sweetness.
Dice the cucumber.
Toast the almonds in a small dry frying pan over a medium heat for a few minutes until golden.
Assemble & Plate Up
Place a Crosta Mollica piadina in a hot dry frying pan for 1 minute on each side.
Then layer the toppings - add the spinach, coronationchickpeas, pickledred onion, cucumber and almonds. Repeat until all the piadina are assembled.
