My wife is the biggest fan of mushrooms and this is one of her favourite recipes. It comes together in no time and delivers strong on flavour. You can play around with types of mushrooms and the bread you’re using. It's equally delicious for breakfast, lunch or dinner.

Ingredients
portobello mushroom 9
garlic cloves 2 (crushed)
red onion 2 (sliced)
fresh parsley 1 handful (chopped)
double cream 200 ml
sugar 1 tsp
vinegar 1 tbsp
white bread 4
Method
Prep the ingredients
Slice the mushrooms thickly. Peel and crush the garlic. Peel and slice the red onions. Chop the parsley.
Cook the mushrooms and the onions
Heat a dash of oil in a frying pan over a medium heat and fry the mushrooms until charred on all sides.
After 5 minutes add the garlic and fry for 1-2 minutes, add the cream, turn down the heat and season with salt and pepper.
In another pan, heat a dash of oil and add the onions, fry for 5 minutes. Once the onions have started to soften, add the sugar and vinegar, season with salt.
Plate up
Toast the bread to your liking.
Stir the parsley through the mushrooms and mix well, then load up a plate with toast, mushrooms and onions. Enjoy!
