Chicken Tikka Rice Bake = the ultimate throw-it-all-in traybake situation, with a high fibre twist using Veetee steam-filtered wholegrain rice. For veg, we’re adding cauliflower and red onion. Tender chicken is coated in tikka spices and baked together with Veetee wholegrain steam-filtered rice so it soaks up ALL that flavour as it cooks. No faff, just one dish doing the most. Then it gets finished with a glossy swirl of mango chutney. Spiced and savoury with a hit of sweetness from that mango chutney.

Ingredients
cauliflower 1 (chopped)
red onion 2 (wedges)
bone in chicken thighs 1000 g
tikka masala paste 4 tbsp
cherry tomatoes 200 g
chicken stock cube 1
Veetee heat & eat wholegrain basmati rice 520 g
fresh coriander 10 g (leaves picked)
mango chutney 2 tbsp
Method
Prep the ingredients
Preheat the oven to 200C/180C fan.
Chop the cauliflower into small bite-sized florets and the red onions into wedges. Then add them to a large baking tray or ovenproof pan, season with salt and pepper and toss in a generous glug of oil.
Pat the chicken thighs dry with kitchen paper, then rub the tikka masala paste all over the chicken thighs and season with salt and pepper.
Cook the chicken & veg
Add the cherry tomatoes to the veg in the tray then pop the chicken thighs on top and drizzle them with a little oil.
Roast for 20 minutes, halfway through the cooking time baste the chicken with the cooking juices.
Add the Veetee Wholegrain Rice
Make up the chicken stock cube with 200ml boiling water.
Remove the tray from the oven, pop the chicken onto a plate.
Add the Veetee wholegrain rice to the pan with the chicken stock breaking it up with a fork and give it a really good mix together with the cooking juices and season with salt and pepper.
Put the chicken back on top of the rice. Roast for another 20 - 25 minutes.
Plate Up
Finish with some fresh corianderleaves and a swirl of mango chutney.
