A classic ham with a spicy hot honey twist! This is absolutely delicious served with fries and green beans. Any leftovers (if you have any!) are also great in a tasty sandwich with pickles.

unsmoked gammon joint 1 kg
onion 1 (sliced)
carrot 1 (chopped)
black peppercorns 1 tsp
cider 500 ml
cloves 1 handful
brown sugar 80 g
English mustard 1 tsp
honey 1 tbsp
hot sauce 70 ml
fries 500 g
green beans 200 g
Method
Preheat the oven to 200°C/180°C fan.
Thickly slice the onion (no need to peel) and roughly chop the carrot.
Add the gammon to a large pan with the onion, carrot and peppercorns. Pour in the cider and enough cold water until the gammon is covered. Bring to a simmer and cook gently for around 1 hour. Leave to cool in the pan, for around 30 minutes.
Transfer the gammon to a baking tray, remove the skin and score the fat in a diamond pattern with a sharp knife. Stud the gammon with the cloves.
Add the soft brown sugar, English mustard, honey and hot sauce to a microwave safe bowl. Microwave on high for 1 - 2 minutes, or until the sugar has dissolved. Pour the glaze over the ham. Bake in the oven for 30 minutes, leaving to rest for 20 minutes before carving.
Meanwhile, bake the fries in the oven on a separate baking tray, according to the packet instructions.
Cook the green beans in boiling water until tender then drain.
Once the ham has rested, carve it up and serve with the fries and green beans. Enjoy!
