This budget friendly recipe is a breeze. It's packed full of healthy fresh vegetables and fermented kimchi. Use pre-cooked rice for a speedy meal, you can also cook the rice from scratch. Aromatic with garlic and sesame oil and topped with a crispy fried egg, this dish will feel like a real treat.

kimchi 350 g
Savoy cabbage 200 g (shredded)
garlic cloves 1 (crushed)
spring onions 2 (sliced)
sesame seeds 1 tbsp (toasted)
soy sauce to taste
sesame oil 2 tbsp
vegetable oil 1 tbsp
basmati microwave rice 440 g
Method
Gently heat a wok or frying pan and tip in the sesame seeds. Cook for a few minutes until golden and then transfer to a plate.
Coarsely shred the savoy cabbage. Finely slice the spring onions. Crush the garlic.
To make the fried rice, heat the vegetable oil with half the sesame oil in a wok or frying pan. Add the cabbage, spring onions and garlic. Stir fry for a minute or so until the cabbage is wilted. Add the rice and continue to stir fry until thoroughly heated through.
Meanwhile, heat the rest of the sesame oil in a a frying pan over a medium-high heat. Break in the eggs and fry until cooked to your liking. Season with a pinch of salt and pepper.
Add the kimchi to the rice, toss around in the pan and season with tamari to taste. You could also use soy sauce if you prefer.
Spoon the fried rice onto plates and top each with a fried egg. Scatter with the toasted sesame seeds and serve with extra optional soy sauce. Enjoy!
