Have you tried the viral Marry Me sauce? It's a winner - in this version we've added a spoonful of miso paste to the sauce for an extra hit of umami. It's paired with juicy chicken and a sweet potato mash. A brilliant speedy dinner.

Ingredients
sweet potato 800 g (peeled)
butter 25 g
onion 1 (sliced)
chicken breast 4
miso paste 1 tbsp
sundried tomatoes 65 g
cream 75 ml
spinach 1 handful
Parmesan 50 g (grated)
Method
Make the sweet potato mash
Peel and chop the sweet potatoes.
Boil the potatoes until soft in salted water, around 8-10 minutes.
Once the potatoes are cooked, drain them in a colander and leave them to steam dry for a couple of minutes, then add them back to the pan.
Beat the butter into the potatoes and season to taste with salt and pepper. Keep warm.
Cook the chicken
While the potatoes are cooking, peel and slice the onion.
Heat a glug of oil in a large frying pan over a medium heat.
Cook the chicken breasts for approx. 5 minutes on each side until cooked through. Remove the chicken from the pan.
Make the sauce
Using the same pan from step 7, add a dash of oil and heat over a medium heat.
Add the onions and gently cook for 5-6 minutes. Stir in the chopped sun-dried tomatoes (as well as some of the oil from the jar) and miso. Stir well to combine and fry for a minute.
Add the cream and spinach and cook for a minute until the spinach wilts.
Add the chicken back to the pan, finish with some Parmesan. Check the seasoning and adjust if needed.
Plate up
Serve the Marry Me Chicken with the sweet potato mash.
